Ingredients
(2 portions)- 2 thick slices of white bread
- Butter for spreading
- 2 tsp of olive oil
- 100g Cheddar-style or Lancashire cheese
- 2 tsp English mustard
- Pinch paprika or cayenne pepper
- 3 tsp Worcestershire sauce
- 2 tsp plain flour
- ¼ bottle Paxton's Real Ale No 93
- ¼ chopped white onion
- 1 clove garlic
- Salt & pepper
Method
- Mix cheese, flour and butter in thick base sauce pan, pour in beer and stir well.
- Heat gently until thickens do not boil.
- Toast the bread lightly and pour the Rarebit mixture on top.
- Return to the grill till golden. Serve with a little dressed salad.
