Dating back as far as Brie de Meaux, this is a very traditional cheese. Soft and white, it has a pronounced earthy smell

Coulommiers is made in the Ile de France region just South East of Paris, in the heart of Brie country. It is, without doubt, as old as Brie and it is likely that it is even older although there is no written evidence to support this. It takes its name from the locality of Seine-et-Marne where the cheese was sold at the market.

The name Coulommiers is not protected, and therefore uncontrolled, and as a result can be used to describe a fresh, unripened curd cheese of soft texture and no rind. However, in France the cheese is a cross between a Brie and a Camembert. It takes 5 litres of milk to make one cheese; the milk has natural cultures and traditional rennet added to turn the milk to curds which are then cut and put by hand into moulds in successive layers. The draining of the curds takes about 8 hours at a temperature of 16 degrees. The unmoulded cheeses are salted and sprinkled with Penicillium Candidum to allow the development of the white mould during the maturation of the cheese. They are then placed in a drying room fro 5 days and then transferred to ripening rooms where they are kept for 3-4 weeks until the desired stage of maturity is reached.

Coulommiers is, as stated, akin to both Camembert and Brie. It has the earthy smell of these cheeses, a similar consistency and is equally as satisfying on a cheese board
