Washed Rind Cheese

These cheeses range from semi hard to soft in texture and can generally be counted on to have strong aromas. Whilst maturing, they are washed or rubbed regularly in solutions such as brine which encourage a different mould to form on the rind, called B-Linens. This mould is characterised by its pink / orange colour and breaks down the cheese to be spongy in texture, making them ideal for melting.

Durrus Irish Farmhouse Cheese is made using traditional methods in the beautiful upland valley of Coomkeen, on the Sheep’s Head peninsula in the far south-west of Ireland. Made by Jeffa Gill since 1979, Durrus Farmhouse Cheese is recognised as one of the finest of the modern Irish farmhouse cheeses made in the artisanal manner.

Jeffa Gill was one of the first of these new traditionalists to revive the art of cheese making in Southern Ireland, and first made her cheese in a pan on the kitchen stove in 1979. The cheese is still made on the farm in a bright and cheerful dairy from top quality local milk.

Durrus has pale coloured inside with a pinkish, yellow, grey rind. It is mild and creamy with a deep aftertaste when young that becomes stronger and fruitier when mature. The odour of the cheese changes from mild to strong depending on maturity.

Durrus won a gold medal at the British Cheese Awards 2010 in the Semi-Soft Rind Washed category.
