Washed Rind Cheese

These cheeses range from semi hard to soft in texture and can generally be counted on to have strong aromas. Whilst maturing, they are washed or rubbed regularly in solutions such as brine which encourage a different mould to form on the rind, called B-Linens. This mould is characterised by its pink / orange colour and breaks down the cheese to be spongy in texture, making them ideal for melting.

A soft and rich washed rind cheese encased in a spruce bark giving the cheese a delicious herbaceous flavour.

Humming Bark is a new exciting venture form Carrigbyrne Farmhouse Dairy County Wexford Southern Ireland. Carrigbyrne is owned by Paddy Berridge who had been making cheese on his farm for over 30 years. Paddy first became interested in making cheese from his cow’s milk when his mother taught him as young boy how to make blue cheese. Paddy's interest grew when he decided to take his passion further by going over to Normandy and learning from a well know Camembert producer. Paddy returned in the 1980s and transferred this new love and passion for cheese making onto his own farm with the help of his wife Julie. Carrigbyrne is an award winning Dairy known for its delicious soft bloomy cheeses.

Humming Bark is Cariggbyrne’s latest addition, developed by Paddy and son Charlie. Humming Bark is a semi-soft cheese with a strong nose and full-flavoured taste. Aged in spruce bark and produced with only the finest milk, this cheese has already been awarded Reserve Champion at both the Irish Cheese Awards the British Cheese Awards in 2014. Humming Bark is similar to Mont d ‘Or but a smaller version. Humming Bark is not for the faint hearted and a connoisseur’s delight, this particularly pungent cheese is a cheese lover's must.
