Milk Type
This is a useful classification because each milk type has very distinct characteristics. Cow's milk cheeses tend to be fatty and can be cloying, goat's milk cheeses are generally sharper and more steely, while sheep's milk cheeses are characterised by their nuttiness. Whilst other milks are used (buffalo especially) there remain vast differences between cheeses produced from the same type of milk so milk type alone is insufficient.
