Commentary
Brillat Savarin was created due to the demand of several cheesemongers, by the producer of the now out-of-production 'Excelsior'. It was the first cheese to be enriched with fat, being invented at the end of the 19th century and was created as a cheese that could feature at grand gastronomic meals.
The name of the cheese is attributed to Henri Androuet in the 1930s - the founder of our Parisian partners, the Fromagerie Androuet - in homage of the celebrated French gastronome Brillat-Savarin
