550 - Petit Munster

Commentary

This famous cheese owes its name to a small town located in the heart of the Vosges mountains. Its origin dates from the 7th century. Benedictine monks had built an abbey in this region (the name Munster probably derives from monastery). Initially the cheeses were for the needs of the abbey itself; only later did the production spread to the whole of the region and it has progressively brought prosperity into a harsh and deprived country. Historically prices were fixed annually, on June 23rd, at a fair in Gerardmer, which is often colloquially known as Gerome and the cheese is sometimes known by this name. Munster was granted AOC status in 1969. The milk for this cheese comes from cows which wander the granite soils of the upper pastures of the Vosges. The cheese is disc-shaped some 7 cms in diameter with a distinctly orange rind which should be moist. The centre is a creamy texture, quite soft with the texture of melting chocolate. It has a pungent smell.
