Commentary
Made at Gorsehill Abbey Farm jon the edge of the Vale of Evesham, St Eadburgha is named after the saint of the old church in the local town of Broadway. Michael and Diane Stacey have been farming there for over 35 years and have been making cheese commercially since 2003. The farm has been registered as organic since 1990, although it has been managed along organic lines for much longer. The farm's cows are traditional breeds recognised for the quality of their milk; Friesian (black and white) and Simmental / Montbeliarde (red & white). They graze pastures, some of which are hundreds of years old, and also orchards of ancient perry pear trees that are used in the making of the popular cider-style drink.
