Blue Cheese

These cheeses range between hard and soft, mild and strong, but always have distinct blue or green veins running through them. The veins are a type of penicillin and are usually introduced by hand into the interior of the cheese with the use of a metal spike.

Toma Cacao and Rum

A blue cheese with crushed cacao beans and rum.

A husband and wife whom have dedicated their life to create the most eclectic cheese selection, mainly for the cheese trolleys of Michelin star restaurants all over Italy.

Toma Cacao and Rum is a blue cow's milk cheese with crushed cacao beans and rum. It is made in the Dolomites. The producer thinks this cheese has a gianduja after taste and believes rum is the best combination with a strong blue.

The sweet, buttery notes of the cheese are dampened by the warming aroma of rum and the bitter bite of the cocoa beans. This cheese is balanced and harmonious yet not overpowering.
