Tete De Moine Whole

Literally meaning Monks Head, this fruity cheese is traditionally eaten by shaving thin curls from it with a Girolle.

Tête de Moine is from the Jura region in North West Switzerland, a high mountainous area where the cattle graze on sweet grasses and herbs on alpine pastures, which gives the cheese its very distinctive sweetness, flavour and aroma.

Tete de Moine was initially produced more than eight centuries ago by the monks of the abbey of Bellelay, located in the community of Saicourt, district of Moutier.

Tête de Moine is made from unpasteurized, whole cow's milk and is a semi-hard cheese which it is cylindrical in shape.

Tete de Moine is a full flavoured cheese which is traditionally eaten by scarping thin curls (rosettes) from the surface of the cheese originally using a knife, but nowadays a Girolle machine is used. This traditional way of eating Tete de Mopine is said to help develop the odour and flavour by allowing oxygen to reach more of the surface.

Tete de Moine goes well with fresh fruits and can also be melted over hot new potatoes for a tasty lunch or supper dish as you would Raclette cheese
