BBQ Baked Bath Soft Cheese

We popped some lumpwood Charcoal into the firepit this weekend ready for a simple supper after a long day gardening in the sunshine. Follow our simple steps to make this delicious dish using Bath Soft Cheese. 

Bath Soft is made locally to our Bath shop and was awarded "Super Gold" at The World Cheese Awards 2019

Ingredients

1 x Bath Soft Cheese (serves 2-4 as a light supper)

Drizzle of honey (try Paxton & Whitfield Acacia Honey)

Optional: Fresh herbs such as Thyme, Rosemary, Parsley or Oregano.

Recipe

Place the Bath Soft cheese on a square of tinned foil (large enough to fully wrap the cheese) and lightly score along the existing lines in the cheese. 

Drizzle with a large glug of honey.

 Top with your fresh herbs if using (we picked some Oregano fresh from the garden).

Wrap your cheese in the tin foil, as if wrapping a gift and place the foil parcel on top of your BBQ grill. Leave to bake for approximately 15 minutes. 

If your coals have cooled from cooking other food, you can place the wrapped parcel directly into the coals to cook. Keep an eye on it - you'll be able to tell when it's gooey inside and then it's ready to eat! 

Enjoy with crackers, crusty bread or crudites.
