Our Cheese of the Month comes from the Highlands of Scotland.
The cheesemaking for Dunlop begins with the best quality, clean milk from a small herd of Ayrshire cows. These cows are native to the Dunlop area and their milk is perfect for cheesemaking. They spend the Summer grazing in the fields and the milk produces a deep, golden coloured cheese.
Dunlop is made to a traditional method and wrapped in cloth. It is matured for at least 7 months to allow the flavours of the milk and environment to fully develop.
The cheese has a moist texture and has a nutty, creamy flavour with a distinct bite at the finish
