Welsh Rarebit


(2 portions)
  • 2 thick slices of white bread
  • Butter for spreading
  • 2 tsp of olive oil
  • 100g Cheddar-style or Lancashire cheese
  • 2 tsp English mustard
  • Pinch paprika or cayenne pepper
  • 3 tsp Worcestershire sauce
  • 2 tsp plain flour
  • ¼ bottle Paxton's Real Ale No 93
  • ¼ chopped white onion
  • 1 clove garlic
  • Salt & pepper 


  1. Mix cheese, flour and butter in thick base sauce pan, pour in beer and stir well.
  2. Heat gently until thickens do not boil.
  3. Toast the bread lightly and pour the Rarebit mixture on top.
  4. Return to the grill till golden. Serve with a little dressed salad.
