Washed Rind Cheese

These cheeses range from semi hard to soft in texture and can generally be counted on to have strong aromas. Whilst maturing, they are washed or rubbed regularly in solutions such as brine which encourage a different mould to form on the rind, called B-Linens. This mould is characterised by its pink / orange colour and breaks down the cheese to be spongy in texture, making them ideal for melting.

A semi hard washed curd cheese made from Guernsey Cows milk and washed in Somerset Cider Brandy.

Made by one of Paxton & Whitfield's favourite cheesemakers in the heart of the West Country, using the pasteurised milk from Guernsey milk.

Blur bassist cum cheese entrepreneur, Alex James, wanted to create a Guernsey Cow milk cheese and as White Lake had previously worked with Alex James on creating Goats milk Cheeses for his Evenlode Partnership he requested that Peter Humphries and Roger Longman at White Lake should have the honours again of produce an outstanding cheese.

Goddess is a delectable semi-soft cheese made with rich Guernsey cows’ milk. The curds and rind are gently washed in Temperley Somerset Cider Brandy giving the paste and the rind a wonderful silky golden hue.
At 4-5 weeks it is very creamy and citrus notes. During maturation the flavour develops and it becomes slightly more pungent and even more buttery and indulgent - perfect at about 8-10 weeks.
