Westcountry Farmhouse Cheddar Made With Raw Milk

Montgomery's Cheddar is one of very few cheddars to be made by hand in the Westcountry using traditional rennet, pasteurised milk and pint starters - something that qualifies it as a Westcountry Farmhouse Cheddar which is Protected Designation of Origin (PDO). The cheeses are hand selected by Paxton & Whitfield. 

Montgomery Cheddar is made by Jamie Montgomery in North Cadbury near Yeovil. The Montgomery family are third generation farmers and make one of very few remaining examples of how Cheddar was made in the 19th century. Jamie has indeed changed very little about the methodology used then in his cheese making process today, although using modern knowledge to create consistent quality. He even uses the same starter cultures that his family used over 70 years ago to ensure variety and depth of flavour in the cheese.

A classic pairing for West Country farm house cheddars is a traditionally brewed West Country cider. Also worth trying with rich, fruity wines like Oloroso sherry or Madeira.
