Cheddar-Style Cheese with minimal Environmental Impact
The award-winning Lincolnshire Poacher is a vintage handmade cheese, made with raw milk from the herd of cattle grazed on the farm. Aged for about 20 months, this cheese is akin to Cheddar but with a more supple texture and spicy, meaty flavour.
Simon and Tim Jones produce their handmade Lincolnshire Poacher Cheese on their dairy farm situated on the eastern edge of the beautiful Lincolnshire Wolds, where the lush pastures sit on chalky land. They are passionate in their responsibility to manage the farm to impart as little negative impact on the environment as possible. There are a number of renewable projects on the farm including a 275kwh wind turbine, 50kwh of solar panel and a straw pellet boiler for heating the milk using straw they have baled themselves.
Paxton & Whitfield's Vintage Poacher is specially selected by our cheese buying team with a maturation time of 18-22 months. Although the taste varies with the seasons, this maturation period delivers more depth and complexity and usually has a distinctive fruity, nutty taste with a clean sweet finish.
Poacher can stand up to the bold flavours of a full bodied red wine like Cabernet Sauvignon. Delicious paired with Paxton & Whitfield Poppy & Linseed crackers and No. 93 Ale Chutney.
