Naturally Smoked Lincolnshire Poacher Cheese

Lincolnshire Poacher cheese is cut from large truckles then locally cold-smoked over 100% oak chips for 24 hours. This produces a beautiful deep golden colour with the woody spiciness of a natural pure oak smoke. The smoking process does not mask the fantastic quality of the cheese itself.

The Smoked Poacher is unlike some other smoked cheeses as the base cheese itself if of a very high quality. Nothing synthetic or unnatural is used in the making of this cheese. 

Simon and Tim Jones produce their cheese on their dairy farm situated on the eastern edge of the beautiful Lincolnshire Wolds, where the lush pastures sit on chalky land. They are passionate in their responsibility to manage the farm to impart as little negative impact on the environment as possible. There are a number of renewable projects on the farm including a 275kwh wind turbine, 50kwh of solar panel and a straw pellet boiler for heating the milk using straw they have baled themselves.

Strong, smokey Poacher needs an abundance of sweet fruit to balance it out like a jammy, Australian Shiraz or Madeira. Smoked cheeses are also great with dram of Whisky.
