Cashel Blue 750g: Cashel Blue cheese starts as a firm textured, crumbly consistency but with ripening it takes on a soft, creamy, almost spreadable texture. As it matures, the flavour also changes, growing stronger and becoming spicier. The rind is very distinctive with a covering of grey and pink moulds.
Waterloo 800g: Waterloo is rich and not too powerful. It has a mildly salty flavour balanced by its lactic centre. It's an attractive and unique cheese for your cheeseboard with its white rind contrasting with the deep cream-coloured paste.
