We're particularly excited about this batch of Shepherd's Store. Made by the Grubb Family of County Tipperary, the cheeses that we have were handmade with the first spring ewes' milk of 2020 - just prior to the full impact of the coronavirus pandemic in the UK. This was the last batch of cheese to be made before the family stopped production due to the uncertainty of the crisis. We're pleased to say that Shepherd's store is now being made again - as a seasonal cheese, it's only made only between the months of February and September.

This batch of almost 12-month aged Shepherd’s Store has a firm, delicately creamy texture with a mix of savoury and gentle sweet notes. It's a definite crowd-pleaser; with alluring notes of caramel and candyfloss. 

Handmade from 100% local Irish Friesland sheep’s milk, each wheel weighs 5kg and it takes 30 sheep one day to produce enough milk to make a single wheel of the cheese (around 50 litres). While maturing Shepherd’s Store, it is washed and turned by hand, once a week for 6 months, until it reaches a balanced flavour.
