Sharpham Rustic with Chives

A semi-soft cheese with a fresh, creamy flavour, complemented by the savoury addition of chive and garlic.

Sharpham Rustic is made on the breath-takingly beautiful Sharpham Estate overlooking the River Dart near Totnes in South Devon. The estate comprises 500 acres of mixed farmland including pasture, vineyards, orchards, woodlands and gardens. From 1981, the18th century coachyard of Sharpham House was home to the creamery where a range of hand made cheeses were produced. Made using the rich milk from the estate's own Jersey cattle and vegetarian rennet, the unpasteurised cheeses were so well received that demand far exceeded supply. In April 2003, production was moved into a new purpose-built creamery sited next to the estate's winery. The building is modern and bigger, however the team still employ the same traditional techniques and the cheeses remain fully hand-produced and free of GM ingredients. Visitors are able to view the process through windows as part of a visit to the estate.

Sharpham keep their herd of Jersey Cows on a nearby farmer in Totnes at the Old Parsonage Farm. The milk is collected daily from the farm and taken to the Sharpham dairy. The cheesemaker, Debbie Mumford, who skilfully combines a meticulous attention to hygiene with traditional methods of production which include cutting, moulding and turning which she does entirely by hand. She adds the chive and garlic when the cheese is still only curd, and once the fresh cheeses have drained sufficiently they are moved to the maturing room and kept under controlled temperature and humidity to ensure even development. This all combines to produce an original cheese of consistently high quality.

Sharpham Rustic Chive and Garlic is creamy and buttery due to the rich Jersey milk, but crumbly and smooth in the mouth. The added herbs give a savoury depth but do not overpower the fresh taste of the cheese.
It is fantastic paired with a good, dry Rose, such as that produced at the same estate.
