Washed Rind Cheese

These cheeses range from semi hard to soft in texture and can generally be counted on to have strong aromas. Whilst maturing, they are washed or rubbed regularly in solutions such as brine which encourage a different mould to form on the rind, called B-Linens. This mould is characterised by its pink / orange colour and breaks down the cheese to be spongy in texture, making them ideal for melting.

Washed in honey mead & matured for a month, this cheese is full flavoured & pungent with a spicy tang.

One of the cheeses from Baron Robert Pouget's collection, Oxford Isis was first produced in 2003 especially to supply Oxford Colleges and restaurants in Oxford City. It was developed with the express intention of competing with French rind washed cheeses such as Epoisses and Soumaintrain.

Oxford Isis is made by using a fresh cheese as the base product. This is then sprayed and ripened with Oxfordshire honey mead over a period of time, during which the cheese alters its character and matures on to a creamy consistency and develops a pronounced flavour and flowery aroma.

Due to its full flavour and pungent, spicy tang, Oxord Isis is best paired with a flowery white wine such as a Gewurztraminer.

Even though the cheese has not been advertised or promoted to any great extent it is in some of the country's top restaurants and specialist retailers.
