A rich and sticky Fig paste with Walnuts. To taste it is thick and fruity, but not too sweet, extremely figgy, with the walnuts coming through to balance. Handmade in the French Pyrenees by an artisan producer, this product is exclusive to Paxton & Whitfield within the UK market - good cheese has always been complimented by fruit, think of Spanish Manchego with Membrillo.
An ideal accompaniment to any goats cheeses (Tomme De Chevre, Le Buchette, Pechegos), but should definitely be tried with Pyrenees ewes milk cheeses such as Ibargui, Le 1909 and Ossau Iraty. Also try pairing with salty blue cheeses such as Roquefort or Highland Blue.
