Delectable, Spoonable Cremoso Cheese
There’s an excitable buzz amongst our cheesemongers about adding this new Spanish cheese to our range for 2021. It’s both delicious and a touch of theatre for your cheeseboard - a sweet, milky, creamy cheese with unrivalled ooziness and guaranteed wow factor.
Cremoso is a torta style cheese with a soft, silky centre. The flavour is mild, slightly sweet, and richly creamy. To best enjoy it, take it out of the fridge an hour prior to serving, slice the top off and scoop out this delectable, scoopable cheese – use it as a dip for sweet or savoury crudites or spoon it onto cheese biscuits or fresh, crusty bread.
Made with a cardoon thistle rennet by the Santos family, who spent two years playing with the recipe for this cheese, specifically to develop a thistle rennet cheese that didn’t have the traditional bitter notes that you expect to find in a torta style cheese. The family use milk from their own herd of sheep which graze on their estate by the Duero river in the Riberas de Castronuño Nature Reserve. The pastures are rich with herbs like rosemary, oregano and thyme which creates the most delicious milk. Such is the quality of the cheese, that it was the star of a dish at renowned Spanish chef Ferran Adrià’s famous El Bulli restaurant where he paired it with cherry flavours.
