Smooth & Silky Belgian Goats' Cheese
This very special goats' milk cheese has a unique texture; creamy and silky inside - with a textural chew from the delicate rind. Its complex and long-lasting flavour is rich and yielding - earthy and yeasty, with a moreish saltiness.
Kato was created by a collaboration between Kaasmakerij Karditsel from Kadrditsel Dairy and Kaasaffineurs Van Tricht. Similar in shape to the French goat cheese Cathare, Kato is a saucer-shaped goat cheese which has an ash coated rind and the letter K imprinted. Using the "moule a la louche" technique, the curds are ladled by hand and made from unpasteurised goats' milk, creating a deliciously creamy texture with beautiful herbal notes.
Karditsel Dairy produces organic goat cheese made from raw milk in Lummen, Flanders, Belgium. They only use milk from Het Goerenhof goats to create their remarkable goats’ cheeses.
A very rare find in the UK, we are delighted to be able to import this unique cheese direct from the cheesemaker in Belgium.
