We have sourced this very special Comté Vieux from our affineur in France . Aged for approximately 29 months in French caves; the flavour is nutty, full and rich, with fruity tones and more of the crunchy Tyrosine crystals formed during the aging of the cheese. Our wheel of Comté Vieux was made on 28th May 2018 and has been maturing until now.
Comté cheeses must go through a strict grading process. The vast majority of cheeses are sold at a much younger age profile, which is perfect for sandwiches and melting. At Paxton & Whitfield, we only sell specially selected batches of Comté from the world-renowned Affineur Marcel Petite whose family have been maturing Comté for five generations. We particularly like cheeses around the 18month age profile as they have the nutty umami characteristics people love in aged cheeses. A very small selection of these cheeses are deigned to be of a high enough calibre to age further. It’s a fine line between beautifully aged and over powering. We have just 2 wheels of this stunning Comté Vieux; selected for us by the expert cheesemongers at Androuet in Paris
