Corra Linn is wonderfully flaky and crunchy, with a nice tangy salinity and a savoury, white miso finish. It also leaves a nice herbaceous note reminiscent of straw with distinct hazelnut flavours.
Corra Linn is a raw sheep’s milk cheese produced in Lanarkshire by second generation cheesemaking family the Erringtons. Made to a recipe akin to a cheddar, in slightly smaller cloth bound truckles. The cheeses are rubbed in local rape seed oil and cloth bound. Sheep’s milk is seasonal, at certain points in the year cheesemakers will experience gluts.
Originally a blue cheese maker (their award winning Lanark Blue is equally delicious) Corra Linn was created in order to find a home for the fantastic quality extra milk. The Erringtons farm Lacaune sheep, a breed most famous for its association with Roquefort production.
Corra Linn is named after picturesque local waterfalls.
