A unique story to a delicious hard cheese, Poacher 50!

During the lockdown period in 2020, renowned cheesemakers at Lincolnshire Poacher faced a significant challenge when they lost their liquid milk buyers due to the closure of coffee shops & resturants alike. However, they decided to turn this challenge into an opportunity to create something unique and special.

They adjusted their cheesemaking process by scalding the milk at a higher temperature of 50°C in order to create a cheese that could be aged for a longer period. As we know, cheesemaking is primarily a preservation technique, and the farmers at Lincolnshire Poacher refused to let the pandemic disrupt their work and let milk go to waste. 

With only three months of batches made, our Jermyn Street cheesemongers tasted through a number of batches and finally selected a batch from 28th April 2020, meaning that this cheese is approaching its fourth birthday and is still as delicious as ever. With its bright and tangy flavour & notes of caramelized pineapple, this cheese is characteristically a Lincolnshire Poacher. Simon and Tim Jones produce their handmade Lincolnshire Poacher Cheese on their dairy farm situated on the eastern edge of the beautiful Lincolnshire Wolds, where the lush pastures sit on chalky land. They are passionate in their responsibility to manage the farm to impart as little negative impact on the environment as possible. There are a number of renewable projects on the farm including a 275kwh wind turbine, 50kwh of solar panel and a straw pellet boiler for heating the milk using straw they have baled themselves.
