Edmund Tew acquires its distinctive orange hue through a meticulous washing process, reminiscent of its French counterpart. This treatment gives the cheese its striking appearance and imparts a savoury, buttery richness that beautifully complements its acidic, lactic centre. We must warn you, Edmund Tew is a strong & punchy cheese, so if you like your gooey strong cheeses, this is the cheese for you! 

Named after Mr. Edmund Tew, a convict sent to Australia in 1829 for stealing cheese, this cheese carries a tale of intrigue and heritage.

David Holton's journey from Australia to the UK paved the way for this exceptional creation. With roots in the Yarra Valley, David's expertise found a home at Commonwork Organic Farm, where he now handmakes this remarkable cheese.

Hand-ladled and acidic-set, Edmund Tew Cheese boasts a sharp core enveloped by an orange-yeasty rind, delivering a robust flavour profile that lingers on the palate.

At Commonwork Organic Farm, a diverse herd of 240 cattle, including Friesians, Swedish Reds, and Montbeliarde, provide the milk for this cheese. This unique blend ensures exceptional quality milk, resulting in a delicious flavour and textured cheese.
