Crumbly & Moreish Barrel Aged Cheese
Introducing Paxton & Whitfield's latest edition, ‘Barrel-Aged’, a delectable and crumbly British cheese.
This delicious ewes’ milk cheese is handcrafted in Somerset and at roughly a week old, it embarks on a journey to Paxton & Whitfield's Cotswold maturation rooms. It then undergoes a minimum six-week brining process, with a brine that Quality Manager Jazz Reeves has meticulously created. The cheese is then left to age in the barrel to reach the optimum flavour profile. The result is a flawlessly balanced cheese with delightful hints of saltiness, complemented by lactic and citrusy notes, with a pleasing, crumbly texture. The Barrel Aged is then portioned into 200g pieces and ready to be enjoyed.
Our Quality Manager Jazz Reeves says “Our Barrel Aged cheese is bright and juicy with a well-balanced acidity. This deliciously summery cheese is fresh, lactic and perfectly salty."
This cheese is perfect for all your summer salads and is also delicious baked! Why not crumble some Barrel Aged on top of cubed watermelon and serve with mint, for a refreshing and delicious alfresco lunch?
Perfectly paired with our Cote de Duras Sauvignon Blanc.
