Autumnal Roasted Vegetables with Old Groendal

Ingredients (serves four)

100g Old Groendal

1 Courgette

2 Large Onions

2 Large Beetroots

2 Peppers

3 Garlic Gloves

2 Sweet Potatoes

1 Sprig of Rosemary

1 Sprig of Sage

Sprinkle of Oregano

Pinch of Salt & Pepper

Drizzle of Olive Oil

(Please note you can use any vegetables of your choice)

Method:

1. Preheat the oven to 220c, (200c fan)

2. Chop up your vegetables into large cubes and place them in a large oven-proof dish.

3. Drizzle the oil over the vegetables and add the salt, pepper, garlic and herbs.

4. Mix the ingredients together and place them in the oven for 20 minutes, then give it a stir and pop back in the oven for a further 20 minutes.  

5. Once everything looks nicely roasted, add your Old Groendal cheese. You can use a cheese plane to create curls or simply grate the cheese on top.
