Elotes with St James Cheese Recipe

Get ready for a mouthwatering twist on a classic! At Paxtons, we have taken the traditional Grilled Mexican Street Corn recipe and added our own special touch with the rich and creamy flavours of St James cheese. A quick and easy recipe, perfect for your bank holiday celebrations!

100g St James cheese
4 corn on the cobs (or 8 halves)
2 Tablespoons mayonnaise
2 Tablespoons sour cream
Tajin or chilli powder, to taste
1 lime, quartered
Fresh chopped Coriander, for garnish, optional

  1. In a large pot, bring salted water to a boil over medium-high heat. Add the corn and cook until tender, approximately 10 minutes.

  2. If desired, brush the corn with melted butter and grill them over medium heat until slightly charred.

  3. In a bowl, combine the mayonnaise and Mexican sour cream, then spread a thin layer of the mixture on the corn.

  4. Grate your St James cheese and generously sprinkle over the corn, followed by your desired amount of chilli powder or tajin.

  5. Serve the corn garnished with coriander and provide lime wedges on the side for squeezing over the top.

  6. Enjoy!
